Orange Couscous with Red Currents

Couscous with red currentsI love making this recipe in late spring or early summer when my red current bush is loaded down with currents. Don’t worry if you don’t have your own personal current bush, you can get them at many grocery store world-wide.

Ingredients

1/2 cup orange juice

1- 1/2 cups water

1 package (approx 350 grams) Couscous

1-2 cups red currents (removed from stems, washed & inspected for bugs).

In a pot add the water and orange juice and bring to a boil. Remove from the heat, pour in the couscous and stir. Let it stand covered according to instruction on the couscous package (typically 5 minutes or until all the liquid has been absorbed).

When ready to start fluffing the couscous (must still be warm) with a fork, slowly start adding in the red currents slowly to ensure they don’t break. Don’t worry if some of the juice escapes from the currents.

Add to a bowl and serve. For a nice & tasty decoration, add a few mint leaves if you have them.

The result is a simple and delicious side dish that perfectly blends the subtle sweet taste of orange juice with the tart/sweet taste of red currents.
